Ingredients

Scale
  • 1 1/2 cups warm water (105-115°F)
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 tablespoon pumpkin puree
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 4 1/2 cups all-purpose flour, plus more for dusting
  • 1/4 cup vegetable oil
  • 10 cups water
  • 1/2 cup baking soda
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a large bowl, combine warm water, sugar, salt, pumpkin puree, and yeast. Let stand for 5 minutes until foamy.
  2. Add flour and oil to the yeast mixture. Mix until a dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
  3. Place dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
  5. In a large pot, bring 10 cups of water and baking soda to a boil.
  6. Divide dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches long. Shape each rope into a pretzel shape.
  7. Carefully drop each pretzel into the boiling water for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.
  9. While pretzels are baking, melt butter in a small bowl. In another bowl, combine sugar and cinnamon.
  10. Brush baked pretzels with melted butter and dip in the cinnamon sugar mixture, coating evenly.
  11. Serve immediately.
