Potato Soup

Bowl of Delicious Potato Soup

This creamy potato soup is the ultimate comfort food! Easy to make with simple ingredients, it’s perfect for a chilly evening.

Ingredients

  • 4 cups Yukon Gold potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, bacon bits, chives

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in flour and cook for 1 minute, creating a roux.
  3. Gradually whisk in chicken broth until smooth.
  4. Add potatoes to the pot and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth.
  6. Return soup to the pot and stir in heavy cream. Heat through, but do not boil.
  7. Season with salt and pepper to taste.
  8. Serve hot with your favorite toppings.

Notes

For a thicker soup, blend a portion of the soup and leave the rest chunky. Top with crispy bacon and a dollop of sour cream for extra flavor!
