Possum Pie Recipe

This traditional Possum Pie recipe features a savory meat filling baked in a flaky crust. It’s a hearty and flavorful dish perfect for a comforting family meal.

  • 1 (2-3 pound) possum, cleaned and dressed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 cup chopped carrots
  • 4 cups water or broth
  • 1 cup cubed potatoes
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 egg, beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the possum in a large pot or Dutch oven. Season with salt, pepper, and garlic powder.
  3. Add the onion, celery, carrots, and water or broth to the pot. Bring to a boil, then reduce heat and simmer for 1 1/2 – 2 hours, or until the possum meat is tender and easily pulls apart.
  4. Remove the possum from the pot and let it cool slightly. Shred the meat and discard the bones and skin.
  5. Return the shredded possum meat to the pot. Add the potatoes and peas. Simmer for another 15-20 minutes, or until the potatoes are tender.
  6. In a separate saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until the sauce thickens.
  7. Pour the white sauce into the possum mixture and stir to combine.
  8. Line a 9-inch pie dish with one of the pie crusts. Pour the possum filling into the crust.
  9. Top with the remaining pie crust. Crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  10. Brush the top crust with the beaten egg.
  11. Bake for 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Let cool slightly before serving.

Serve with a side of green beans or a simple salad for a complete meal.
