Pineapple Cowboy Candy is a sweet and spicy preserve featuring pineapple and peppers, perfect as a flavorful condiment or gift. This homemade treat balances tangy pineapple with a kick of heat for an irresistible taste.

  • 3 cups crushed pineapple with juice
  • 2 cups granulated sugar
  • 1 cup white vinegar (5% acidity)
  • 1 tablespoon grated fresh ginger
  • 1 1/2 teaspoons ground turmeric
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons crushed red pepper flakes
  • 1 cup finely chopped red bell peppers
  • 1 cup finely chopped jalapeño peppers (seeds removed for less heat)

Instructions

  1. Combine the pineapple, sugar, and vinegar in a large saucepan over medium heat.
  2. Add grated ginger, turmeric, salt, and crushed red pepper flakes to the saucepan and stir well.
  3. Bring the mixture to a boil, then reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
  4. Add the chopped red bell peppers and jalapeño peppers and continue to simmer for an additional 45 minutes or until the mixture thickens and becomes syrupy.
  5. Stir frequently during the last 15 minutes to prevent sticking.
  6. Remove from heat and carefully ladle the hot candy into sterilized jars, leaving 1/4 inch headspace.
  7. Seal jars with lids and let cool to room temperature before refrigerating.

Notes

For a milder version, remove all seeds from the jalapeños or substitute with milder peppers. Serve cowboy candy alongside cream cheese and crackers for a delicious appetizer.
