  • 1 tablespoon olive oil
  • 1 pound thinly sliced sirloin steak, cut into bite-sized pieces
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded provolone cheese
  • Crusty rolls, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the steak and cook until browned, about 5-7 minutes. Remove the steak from the pot and set aside.
  2. Add the onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
  3. Pour in the beef broth and stir in the Worcestershire sauce, thyme, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in the cream cheese until melted and smooth.
  5. Return the steak to the pot and stir in the provolone cheese until melted.
  6. Serve hot with crusty rolls, if desired.

Notes

For an extra layer of flavor, try adding a splash of hot sauce or a sprinkle of red pepper flakes. You can also top the soup with additional provolone cheese or a dollop of sour cream.
