These Philadelphia Cheesecake Bars are a creamy, dreamy dessert that’s easy to make and perfect for any occasion. With a buttery graham cracker crust and a smooth cheesecake filling, they’re sure to be a crowd-pleaser!

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into the bottom of an 8×8 inch baking pan.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth.
  4. Beat in sour cream and vanilla extract.
  5. Add eggs, one at a time, beating well after each addition.
  6. Pour filling over crust.
  7. Bake for 25-30 minutes, or until set.
  8. Let cool completely before cutting into bars.
  9. Refrigerate for at least 2 hours before serving.

Notes

For a richer flavor, use full-fat cream cheese and sour cream. You can also add a layer of your favorite fruit topping before baking for a delicious variation.
