Parmesan Herb Sweet Potato Medallions

Deliciously tender sweet potato medallions infused with aromatic herbs and a crispy Parmesan crust, perfect as a savory side dish or snack.

  • 2 large sweet potatoes
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into 1/2-inch thick medallions.
  3. In a small bowl, mix together Parmesan cheese, dried thyme, dried rosemary, garlic powder, salt, and pepper.
  4. Brush both sides of each sweet potato medallion with olive oil.
  5. Press the Parmesan herb mixture onto both sides of each medallion, ensuring they are well coated.
  6. Arrange the medallions in a single layer on the prepared baking sheet.
  7. Bake for 20-25 minutes, flipping halfway through, until medallions are golden and crispy on the outside and tender inside.
  8. Remove from the oven and garnish with fresh parsley if desired. Serve warm.

Notes

For extra crispiness, finish the medallions under the broiler for 1-2 minutes watching carefully to avoid burning.
