  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup cooked rice
  • Salt and pepper to taste
  • Shredded cheddar cheese, for topping (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Stir in the garlic and cook for 1 minute more.
  3. Stir in the crushed tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or up to 1 hour, to allow the flavors to meld.
  5. Stir in the cooked rice during the last 5 minutes of cooking time.
  6. Ladle the soup into bowls and top with shredded cheddar cheese, if desired.
  7. Serve hot and enjoy!

Notes

For an extra layer of flavor, add a can of diced tomatoes with green chilies. You can also substitute ground turkey or chicken for the ground beef. Serve with crusty bread for dipping.
