Classic Old Fashioned Chocolate Pie

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 3 cups milk
  • 3 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 baked 9-inch pie crust
  • Whipped cream, for serving (optional)

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, salt, and cornstarch.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  4. Reduce heat and simmer for 1 minute, stirring constantly.
  5. Remove from heat. Gradually whisk a small amount of the hot mixture into the egg yolks to temper them.
  6. Pour the tempered egg yolk mixture back into the saucepan and whisk to combine.
  7. Cook over low heat for 1 minute, stirring constantly.
  8. Remove from heat and stir in the butter and vanilla extract until smooth.
  9. Pour the chocolate filling into the baked pie crust.
  10. Cover the pie with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming.
  11. Refrigerate for at least 4 hours, or preferably overnight, until set.
  12. Serve chilled with whipped cream, if desired.

Notes

For an extra touch of flavor, sprinkle a little sea salt on top before serving.
