Delicious No-Bake Pumpkin Cheesecake

This No-Bake Pumpkin Cheesecake is the perfect fall dessert! Creamy, dreamy, and packed with pumpkin spice flavor, it’s incredibly easy to make without ever turning on your oven.

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 (15 ounce) can pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping, thawed

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese until smooth. Gradually add pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla extract. Beat until well combined.
  3. Gently fold in whipped topping until smooth.
  4. Pour the pumpkin mixture over the graham cracker crust.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight.
  6. Before serving, remove the cheesecake from the springform pan.
  7. Garnish with additional whipped topping, cinnamon, or graham cracker crumbs, if desired.

Notes

For an extra touch, drizzle with caramel sauce or sprinkle with chopped pecans before serving.
