No-Bake Greek Yogurt Jello Cheesecake

This No-Bake Greek Yogurt Jello Cheesecake is a light, refreshing dessert that combines creamy Greek yogurt with fruity Jello for a perfect guilt-free treat.

  • 1 package (3 oz) Jello gelatin (any fruit flavor)
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups plain Greek yogurt
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 prepared graham cracker crust (9-inch)

Instructions

  1. In a bowl, dissolve Jello gelatin in boiling water and stir until completely dissolved.
  2. Add the cold water to the gelatin mixture and stir well. Let it cool to room temperature but not set.
  3. In a separate bowl, beat the softened cream cheese with sugar until smooth and creamy.
  4. Add Greek yogurt and vanilla extract to the cream cheese mixture and blend well.
  5. Slowly pour the cooled gelatin mixture into the cream cheese and yogurt mixture, stirring constantly until well combined.
  6. Pour the filling into the prepared graham cracker crust and smooth the top with a spatula.
  7. Refrigerate for at least 4 hours or until fully set.
  8. Slice and serve chilled. Optionally garnish with fresh fruit or whipped cream.

Notes

For an extra fruity touch, top with fresh berries or a drizzle of fruit syrup before serving.
