These Mini Meatloaf Muffins are a fun and easy twist on classic meatloaf, perfect for weeknight dinners or kid-friendly meals. Made with simple ingredients and baked in muffin tins, they’re conveniently portioned and full of flavor.

  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix well with your hands until just combined. Be careful not to overmix.
  3. If using, gently fold in cheddar cheese.
  4. Divide the meatloaf mixture evenly among the prepared muffin cups.
  5. Bake for 20-25 minutes, or until the meat is cooked through and the internal temperature reaches 160°F (71°C).
  6. Let cool in the muffin tin for a few minutes before removing and serving.

Notes

Serve these mini meatloaf muffins with a dollop of extra ketchup or your favorite dipping sauce. They’re also great with mashed potatoes and a side of steamed vegetables.
