Delicious Mexican Rotisserie Chicken Tostadas

These quick and easy Mexican Rotisserie Chicken Tostadas are perfect for a weeknight meal! Loaded with flavor and customizable toppings, they’re a family favorite.

  • 1 rotisserie chicken, shredded
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon oregano
  • 1/4 cup chicken broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • Tostada shells
  • Optional toppings: sour cream, salsa, guacamole, jalapeños

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in chili powder, cumin, smoked paprika, and oregano. Cook for 30 seconds, until fragrant.
  3. Add shredded rotisserie chicken and chicken broth to the skillet. Simmer for 5 minutes, or until heated through.
  4. Stir in black beans and corn. Cook for 2 minutes, until heated through.
  5. To assemble the tostadas, place a tostada shell on a plate. Top with the chicken mixture, shredded cheddar cheese, and cilantro.
  6. Serve immediately with lime wedges and your favorite toppings.

Notes

For an extra layer of flavor, try adding a dollop of refried beans to the tostada shell before adding the chicken mixture. You can also use your favorite type of shredded cheese.
