  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, oil-packed, drained
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  3. Place chicken breasts in a baking dish. Pour the lemon-herb mixture over the chicken, ensuring each piece is well coated.
  4. Top chicken with sun-dried tomatoes, Kalamata olives, and feta cheese.
  5. Bake for 20-25 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
