This creamy Marry Me Chicken Soup is a comforting and flavorful twist on the popular dish. It’s packed with tender chicken, sun-dried tomatoes, and Parmesan cheese in a rich broth, guaranteed to win hearts!

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned and cooked through. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese until cheese is melted and smooth.
  6. Return chicken to the pot and heat through.
  7. Stir in fresh basil. Season with salt and pepper to taste.
  8. Serve hot.

Notes

Serve with crusty bread for dipping into the delicious broth. You can also add spinach or kale for extra nutrients.
