  • 1 cup heavy cream
  • 1/2 cup maple syrup
  • 1/4 cup milk
  • 3 large egg yolks
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, whisk together heavy cream, maple syrup, and milk.
  2. In a separate bowl, whisk together egg yolks and cornstarch until smooth.
  3. Gradually whisk a small amount of the hot cream mixture into the egg yolk mixture to temper it.
  4. Pour the egg yolk mixture back into the saucepan with the remaining cream mixture.
  5. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer, about 5-7 minutes.
  6. Remove from heat and stir in butter, vanilla extract, and salt.
  7. Pour the filling into the pre-baked pie crust.
  8. Let cool completely, then refrigerate for at least 2 hours before serving.
