  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 2 cups cooked elbow macaroni
  • 2 cups shredded cheddar cheese
  • Optional: Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth, milk, and heavy cream. Stir in Dijon mustard, smoked paprika, and black pepper. Bring to a simmer.
  3. Add cooked elbow macaroni and cheddar cheese. Stir until cheese is melted and soup is smooth.
  4. Simmer for 5-10 minutes to allow flavors to meld.
  5. Serve hot, garnished with chopped green onions, if desired.

Notes

For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the soup.
