Luxe Cranberry Tiramisu

A festive twist on classic tiramisu, featuring tart cranberries layered with creamy mascarpone and delicate ladyfingers soaked in espresso.

Ingredients

  • 1 cup fresh cranberries
  • 1/2 cup sugar, divided
  • 1/2 cup water
  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese, softened
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup espresso or strong coffee, cooled
  • 24 ladyfinger cookies
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a small saucepan, combine cranberries, 1/4 cup sugar, and water. Cook over medium heat until cranberries burst and sauce thickens, about 10 minutes. Let cool.
  2. In a heatproof bowl, whisk egg yolks and 3/4 cup sugar. Place over simmering water and whisk constantly until thick and pale, about 5 minutes. Remove from heat and let cool slightly.
  3. Fold mascarpone cheese into the egg mixture until smooth.
  4. In a separate bowl, whip heavy cream and vanilla extract to stiff peaks. Gently fold whipped cream into mascarpone mixture.
  5. Dip ladyfingers quickly into cooled espresso and arrange a layer in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Top with half of the cranberry sauce.
  8. Repeat layering with remaining ladyfingers, mascarpone mixture, and cranberry sauce.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust the top with unsweetened cocoa powder.

Notes

For added texture, sprinkle toasted chopped pistachios between layers or serve with a splash of cranberry liqueur for an adult twist.
