Loaded Potato Meatloaf

This Loaded Potato Meatloaf combines the comforting flavors of creamy mashed potatoes with hearty meatloaf, topped with melted cheese and crispy bacon for a satisfying family dinner.

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and chopped
  • 1/2 cup onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined.
  3. Grease a loaf pan and press half of the meat mixture into the bottom.
  4. Spread mashed potatoes evenly over the meat layer.
  5. Top the potatoes with shredded cheddar cheese and chopped bacon.
  6. Add the remaining meat mixture on top, smoothing the surface.
  7. Bake uncovered for 60 minutes or until the meatloaf is cooked through and the top is golden.
  8. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, serve with a drizzle of barbecue sauce or your favorite gravy.
