Homemade Loaded Hamburger Soup Ready to Serve

This hearty Loaded Hamburger Soup is packed with ground beef, vegetables, and cheese for a comforting and flavorful meal. It’s a quick and easy dinner that’s perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup frozen peas
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, green onions

Instructions

  1. In a large pot or Dutch oven, brown ground beef over medium-high heat. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in Italian seasoning, salt, and pepper.
  4. Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add kidney beans, corn, and peas to the pot. Cook for an additional 5 minutes, or until heated through.
  6. Remove from heat and stir in shredded cheddar cheese until melted.
  7. Serve hot and garnish with optional toppings such as sour cream and green onions.

Notes

For a creamier soup, stir in 1/2 cup of heavy cream or sour cream before serving. You can also add other vegetables like carrots, celery, or potatoes.
