  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons limoncello liqueur
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, limoncello liqueur, and lemon zest until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just incorporated.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Optionally, dust the cooled cookies with powdered sugar before serving.

Notes

For an extra burst of lemon flavor, drizzle the cooled cookies with a simple lemon glaze made from powdered sugar and fresh lemon juice.
