Lemon Vinaigrette

This bright and zesty lemon vinaigrette is a fresh and natural dressing perfect for salads, vegetables, and grilled dishes.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl, whisk together the lemon juice, Dijon mustard, honey, and minced garlic until combined.
  2. Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.
  3. Season with salt and freshly ground black pepper to taste.
  4. Taste and adjust sweetness or acidity if needed by adding more honey or lemon juice.
  5. Serve immediately or refrigerate in an airtight container for up to one week. Whisk again before serving.

Notes

For a creamier dressing, blend all ingredients with 1 tablespoon of Greek yogurt or use a blender for a smoother texture.
