This Lemon-Herb Chicken Nourish Bowl features tender grilled chicken marinated in fresh lemon and herbs, served atop a vibrant mix of wholesome grains and vegetables for a nourishing, flavorful meal.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup shredded carrots
  • 2 tablespoons chopped fresh parsley
  • 1/4 avocado, sliced (optional)
  • 1 tablespoon feta cheese (optional)

Instructions

  1. In a bowl, combine olive oil, lemon juice and zest, garlic, oregano, salt, and pepper to create the marinade.
  2. Place chicken breasts in the marinade, coating evenly. Let marinate for at least 20 minutes.
  3. Preheat grill or skillet over medium-high heat.
  4. Grill chicken breasts for 6-7 minutes per side or until cooked through and juices run clear.
  5. Remove chicken and let rest for 5 minutes before slicing.
  6. In a serving bowl, layer cooked quinoa, baby spinach, cherry tomatoes, cucumber, shredded carrots, and parsley.
  7. Top the bowl with sliced lemon-herb chicken, then garnish with avocado slices and feta cheese if desired.
  8. Serve immediately and enjoy your nourishing bowl!

Notes

For extra flavor, drizzle with a light tahini dressing or add a sprinkle of toasted pine nuts for crunch.
