  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs, lightly beaten
  • 2 cups pecan halves

Instructions

  1. Prepare the Chocolate Layer: Preheat oven to 350°F (175°C). In a medium bowl, combine chocolate wafer crumbs, melted butter, granulated sugar, and cocoa powder. Press firmly into the bottom of a 9-inch pie plate.
  2. Bake the Crust: Bake the chocolate crust for 8-10 minutes, or until set. Remove from oven and let cool slightly.
  3. Prepare the Pecan Layer: In a large bowl, whisk together brown sugar, corn syrup, melted butter, vanilla extract, and salt until smooth.
  4. Add Eggs and Pecans: Gradually whisk in the lightly beaten eggs until well combined. Stir in the pecan halves.
  5. Pour Filling: Pour the pecan mixture over the cooled chocolate crust.
  6. Bake the Pie: Bake for 45-50 minutes, or until the filling is set but still slightly jiggly in the center.
  7. Cool and Serve: Let the pie cool completely on a wire rack before serving. Refrigerate for at least 2 hours for easier slicing.
