Lasagna Soup

Delicious Lasagna Soup

  • 1 pound Italian sausage, removed from casing
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the crushed tomatoes, tomato sauce, chicken broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the broken lasagna noodles to the soup and cook until tender, about 10-12 minutes.
  6. In a small bowl, combine the ricotta cheese, Parmesan cheese, and parsley.
  7. Ladle the soup into bowls and top with a spoonful of the ricotta cheese mixture. Serve immediately.

Notes

For a richer flavor, use beef broth instead of chicken broth. You can also add other vegetables to the soup, such as mushrooms, bell peppers, or zucchini.
