This hearty Kielbasa Potato Soup is packed with smoky sausage, tender potatoes, and flavorful broth. It’s a comforting and easy-to-make meal that’s perfect for a chilly day.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1.5 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup milk or half-and-half
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa sausage and cook until browned, about 5-7 minutes. Remove sausage from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth, add thyme, smoked paprika, and black pepper. Bring to a boil.
  4. Add potatoes and cook until tender, about 15-20 minutes.
  5. Return kielbasa to the pot.
  6. Stir in milk or half-and-half. Heat through, but do not boil.
  7. Season with salt to taste.
  8. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add other vegetables like carrots or celery.
