This hearty Italian Sausage and Potato Soup is a comforting and flavorful meal perfect for chilly evenings. Featuring savory Italian sausage, tender potatoes, and aromatic herbs in a rich broth, it’s a family-friendly favorite.

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups Yukon Gold potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup kale, chopped
  • 1/4 cup heavy cream (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it apart with a spoon. Drain any excess grease.
  2. Add the olive oil, chopped onion, and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and add the diced potatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale and cook for an additional 5 minutes, or until the kale is wilted.
  5. If desired, stir in the heavy cream for a richer flavor.
  6. Serve hot, garnished with grated Parmesan cheese, if desired.

Notes

For a spicier soup, use hot Italian sausage. You can also add a pinch of red pepper flakes to the soup while it’s simmering. Serve with crusty bread for dipping.
