Instant Pot Zuppa Toscana Soup - Ready to Serve

Enjoy a comforting and flavorful Zuppa Toscana soup made quickly and easily in your Instant Pot. This creamy, sausage and kale soup is a hearty and satisfying meal perfect for busy weeknights.

Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups water
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 4 cups chopped kale
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to sauté. Add the Italian sausage and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add the onion and garlic to the Instant Pot and cook until softened, about 3-5 minutes.
  3. Pour in the chicken broth and water. Add the cubed potatoes and red pepper flakes (if using).
  4. Seal the Instant Pot and cook on high pressure for 8 minutes. Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  5. Carefully remove the lid. Stir in the heavy cream and kale. Season with salt and pepper to taste.
  6. Let the soup sit for a few minutes until the kale wilts.
  7. Serve hot and enjoy!

Notes

Garnish with grated Parmesan cheese and a drizzle of olive oil for extra flavor.
