This Honeynut Squash Pasta is a comforting and flavorful dish, perfect for a cozy night in. Sweet roasted honeynut squash is blended into a creamy sauce, then tossed with your favorite pasta for a delicious and easy meal.

  • 1 honeynut squash, halved and seeded
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 8 ounces pasta
  • 1/4 cup vegetable broth
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons chopped fresh sage
  • Red pepper flakes, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss honeynut squash halves with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Place cut-side up on a baking sheet and roast for 30-40 minutes, or until tender.
  2. While the squash is roasting, cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  3. Once the squash is cool enough to handle, scoop out the flesh and place it in a blender or food processor. Add vegetable broth and blend until smooth.
  4. In a large skillet, heat the remaining 1 tablespoon olive oil over medium heat. Add the squash puree and cook for 2-3 minutes, stirring occasionally.
  5. Add the cooked pasta to the skillet and toss to coat. Add Parmesan cheese and reserved pasta water as needed to reach desired consistency. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh sage, red pepper flakes (if using), and additional Parmesan cheese.

Notes

For a richer flavor, add a tablespoon of butter to the sauce along with the Parmesan cheese. You can also add cooked chicken or sausage for extra protein.
