  • 2 cups cooked white or brown rice
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together honey, sriracha sauce, soy sauce, rice vinegar, and minced garlic to make the sauce.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  3. Pour the sauce over the cooked chicken and stir to coat. Cook for another 2-3 minutes until sauce thickens slightly.
  4. Divide cooked rice into bowls. Top with the honey sriracha chicken, shredded carrots, sliced cucumber, and green onions.
  5. Garnish with sesame seeds and serve immediately. Enjoy!

Notes

For extra crunch, add chopped peanuts or cashews on top before serving. You can also swap rice for quinoa or cauliflower rice for a lighter option.
