Sweet and savory honey garlic butter roasted carrots are tender, flavorful, and perfect as a side dish for any meal.

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine melted butter, honey, minced garlic, salt, and pepper.
  3. Add the carrot sticks to the bowl and toss until evenly coated with the honey garlic butter mixture.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 20-25 minutes, stirring halfway through, until carrots are tender and caramelized.
  6. Remove from the oven and sprinkle with fresh parsley, if desired, before serving.

Notes

For extra flavor, drizzle a little balsamic vinegar over the carrots before roasting or garnish with toasted sesame seeds.
