homemade mayonnaise

A creamy, natural homemade mayonnaise made with simple ingredients, perfect for sandwiches, dressings, and dips.

  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar or lemon juice
  • 1 cup neutral oil (such as vegetable or canola oil)
  • Salt to taste
  • Freshly ground black pepper to taste (optional)

Instructions

  1. In a bowl, whisk together the egg yolk, Dijon mustard, and white wine vinegar or lemon juice until well blended.
  2. Slowly drizzle in the oil while whisking constantly, starting drop by drop to emulsify the mixture. Gradually increase to a steady thin stream as the mixture thickens.
  3. Continue whisking until the mayonnaise is thick and creamy.
  4. Season with salt and freshly ground black pepper to taste.
  5. Store in an airtight container in the refrigerator and use within one week.

Notes

For a lighter texture, try using half olive oil and half neutral oil. You can also add fresh herbs or garlic for flavored mayonnaise variations.
