This Homemade Garlic Soup is a comforting and flavorful dish perfect for a chilly day. It’s surprisingly easy to make and packed with the immune-boosting benefits of garlic.

  • 8 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • Crusty bread, for serving (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add minced garlic and cook for 1-2 minutes, or until fragrant and lightly golden (be careful not to burn).
  2. Pour in vegetable broth, add thyme, salt, pepper, and bay leaf. Bring to a simmer.
  3. Reduce heat to low and simmer for 15-20 minutes, allowing the flavors to meld.
  4. Remove the bay leaf before serving.
  5. Ladle soup into bowls and garnish with fresh parsley. Serve with crusty bread, if desired.

Notes

For a richer flavor, you can add a swirl of cream or a dollop of sour cream before serving.
