Creamy Homemade Béchamel Sauce

This classic homemade béchamel sauce is incredibly easy to make and forms the base for many delicious dishes. With just a few simple ingredients, you’ll have a smooth, creamy, and versatile sauce perfect for pasta, gratins, and more.

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon white pepper, or to taste
  • Pinch of ground nutmeg (optional)

Instructions

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux. Be careful not to brown the roux.
  3. Gradually whisk in the milk, a little at a time, ensuring each addition is fully incorporated before adding more. This will help prevent lumps.
  4. Continue whisking constantly until the sauce thickens and comes to a simmer, about 5-7 minutes.
  5. Reduce the heat to low and simmer for another 5 minutes, stirring occasionally to prevent sticking.
  6. Remove from heat and stir in the salt, white pepper, and nutmeg (if using).
  7. Taste and adjust seasonings as needed.
  8. Use immediately or let cool slightly before storing.

Notes

For a richer flavor, infuse the milk with a bay leaf or onion while heating. Remove before adding the milk to the roux.
