Hashbrown Casserole

This creamy and cheesy Hashbrown Casserole is the ultimate comfort food! Perfect for breakfast, brunch, or a potluck side dish, it’s easy to make and always a crowd-pleaser.

  • 30 ounces frozen shredded hash browns, thawed
  • 1/2 cup melted butter
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups crushed cornflakes
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the thawed hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, onion, 1 1/2 cups of the cheddar cheese, salt, and pepper. Mix well.
  3. In a separate bowl, combine the crushed cornflakes and 1/4 cup melted butter.
  4. Pour the hash brown mixture into a greased 9×13 inch baking dish.
  5. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  6. Top with the cornflake mixture.
  7. Bake for 45-50 minutes, or until golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

For a spicier version, add a pinch of cayenne pepper or a dash of hot sauce to the hash brown mixture. You can also top with crumbled bacon for added flavor.
