  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, peeled and cubed
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup frozen peas
  • 2 cups vegetable broth
  • 1 tsp dried dill
  • Salt and pepper to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and carrots and cook until softened, about 5 minutes.
  2. Add potatoes and diced tomatoes. Cook for another 3 minutes, stirring occasionally.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until potatoes are tender.
  4. Stir in frozen peas and dill. Cook for another 5 minutes, or until peas are heated through.
  5. Season with salt and pepper to taste.
  6. Serve hot with lemon wedges, if desired.

Notes

For a richer flavor, add a tablespoon of tomato paste along with the diced tomatoes. Garnish with fresh dill or parsley before serving.
