This Greek Green Peas Stew, or ‘Arakas Latheros,’ is a flavorful and healthy vegetarian dish simmered in a rich tomato and herb broth. It’s a simple yet satisfying meal perfect for any time of year.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 pound frozen green peas
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 cup vegetable broth (or water)
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Stir in the diced tomatoes (with their juice), green peas, dill, parsley, oregano, salt, and pepper.
  3. Pour in the vegetable broth (or water). Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 20-25 minutes, or until the peas are tender.
  4. Taste and adjust seasonings as needed.
  5. Serve hot with a drizzle of olive oil and lemon wedges, if desired. Crusty bread is also a great accompaniment.

Notes

For a richer flavor, you can add a pinch of sugar or a small piece of potato to the stew while it simmers. The potato will thicken the sauce slightly.
