gooey chocolate cake

  • 1/2 cup (115g) unsalted butter
  • 6 ounces (170g) bittersweet or semisweet chocolate, chopped
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Grease and flour four 6-ounce ramekins.
  2. Melt the butter and chocolate together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
  3. Whisk in the sugar until combined.
  4. Add eggs and egg yolks, one at a time, whisking after each addition.
  5. Stir in vanilla extract.
  6. Gently fold in the flour and salt until just combined.
  7. Divide the batter evenly among the prepared ramekins.
  8. Bake for 12-14 minutes, until the edges are set but the centers are still soft and gooey.
  9. Remove from oven and let sit for 1 minute. Carefully invert each cake onto a plate and serve warm.
