  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 cup cold shortening, cubed
  • 5-7 tablespoons ice water
  • 1 cup Greek honey
  • 1/4 cup heavy cream
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground cloves
  • Chopped walnuts or pistachios, for garnish (optional)

Instructions

  1. Make the crust: In a large bowl, whisk together flour and salt. Cut in the butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the filling: In a medium bowl, whisk together honey, heavy cream, eggs, vanilla extract, cinnamon, and cloves until well combined.
  4. Assemble the pie: On a lightly floured surface, roll out the dough to a 12-inch circle. Transfer the dough to a 9-inch pie plate and trim and crimp the edges.
  5. Pour the honey filling into the pie crust.
  6. Bake: Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, or until the crust is golden brown and the filling is set. If the crust starts to brown too quickly, cover the edges with foil.
  7. Let the pie cool completely on a wire rack before serving. Garnish with chopped walnuts or pistachios, if desired.
