These vibrant Goat Cheese Stuffed Mini Peppers are a flavorful and easy appetizer perfect for any occasion, combining creamy goat cheese with the natural sweetness of mini peppers.

Ingredients

  • 15 mini sweet peppers
  • 4 oz goat cheese, softened
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash mini peppers, slice in half lengthwise, and remove seeds.
  3. In a bowl, mix goat cheese, chives, olive oil, lemon zest, salt, and pepper until smooth.
  4. Spoon the goat cheese mixture evenly into each pepper half.
  5. Arrange stuffed peppers on a baking sheet and bake for 10-12 minutes until peppers are tender and cheese is slightly warmed.
  6. Remove from oven and let cool slightly before serving.

Notes

For an added crunch, sprinkle toasted pine nuts on top before serving or drizzle with a balsamic glaze for extra flavor.
