Freshly prepared Ginger Scallion Chicken Noodle Soup

This comforting Ginger Scallion Chicken Noodle Soup features tender chicken, fresh ginger, and scallions in a flavorful broth, perfect for a cozy meal any day of the week.

Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, peeled and grated
  • 6 scallions, sliced (white and green parts separated)
  • 8 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 200g egg noodles or rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Red chili flakes (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add minced garlic, grated ginger, and the white parts of the scallions. Sauté for 2–3 minutes until fragrant.
  2. Pour in the chicken broth and bring it to a boil.
  3. Add the chicken breasts to the boiling broth. Reduce heat to a simmer and cook for 15–20 minutes until the chicken is fully cooked.
  4. Remove the chicken breasts and shred them using two forks.
  5. Add the noodles to the simmering broth and cook according to package instructions until tender.
  6. Return the shredded chicken to the pot. Stir in soy sauce and sesame oil, and season with salt and pepper to taste.
  7. Turn off the heat and stir in the green parts of the scallions.
  8. Ladle the soup into bowls and garnish with fresh cilantro and red chili flakes if desired. Serve hot.

Notes

For extra depth, add a splash of rice vinegar or a dash of chili garlic sauce before serving. Leftovers keep well and the flavors deepen overnight.
