Garlic Steak Bites and Potatoes on a Rustic Plate

These juicy Garlic Steak Bites and Potatoes are a quick and easy one-pan meal, perfect for a weeknight dinner. Tender steak and crispy potatoes are tossed in a flavorful garlic butter sauce.

  • 1.5 lbs Sirloin Steak, cut into 1-inch cubes
  • 1.5 lbs Baby Potatoes, quartered
  • 4 tbsp Olive Oil, divided
  • 4 tbsp Butter, unsalted
  • 6 cloves Garlic, minced
  • 1 tbsp Fresh Thyme, chopped
  • 1 tbsp Fresh Rosemary, chopped
  • 1 tsp Smoked Paprika
  • 1/2 tsp Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste
  • Fresh Parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the quartered baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Bake the potatoes for 20 minutes.
  4. While the potatoes are baking, season the steak cubes with salt, pepper, and smoked paprika.
  5. In a large skillet over medium-high heat, heat the remaining 2 tablespoons of olive oil. Add the steak cubes and sear on all sides until browned, about 5-7 minutes. Remove steak from the skillet and set aside.
  6. In the same skillet, melt the butter over medium heat. Add the minced garlic, thyme, and rosemary. Cook for 1 minute, until fragrant. Add red pepper flakes, if using.
  7. Add the partially cooked potatoes to the skillet with the garlic butter sauce. Toss to coat.
  8. Return the steak to the skillet and toss with the potatoes and garlic butter.
  9. Continue to cook for another 5-7 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender and slightly crispy.
  10. Garnish with fresh parsley before serving.
