Ingredients

Scale
  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, quartered
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat the steak cubes dry with paper towels and season generously with salt and pepper.
  2. In a large skillet (preferably cast iron), heat olive oil over medium-high heat. Add the steak and sear for 2-3 minutes per side, until browned. Remove steak from skillet and set aside.
  3. Add potatoes to the skillet and cook for 10-15 minutes, or until golden brown and tender, stirring occasionally.
  4. Add 2 tablespoons of butter to the skillet with the potatoes. Once melted, add the minced garlic, thyme, and rosemary. Cook for 1 minute, until fragrant.
  5. Return the steak to the skillet. Add the remaining 2 tablespoons of butter. Cook for another 2-3 minutes, or until the steak is cooked to your desired doneness, stirring to coat everything in the garlic butter.
  6. Garnish with fresh parsley and serve immediately.
