Delight in these colorful and fluffy Funfetti Whoopie Pies, perfect for celebrations or a sweet treat. Soft cake-like cookies sandwich a creamy frosting full of sprinkles for a fun twist on a classic dessert.

  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup rainbow sprinkles (jimmies)
  • 1 cup marshmallow fluff
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons heavy cream (for frosting)
  • Extra sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat 3/4 cup softened butter and granulated sugar until fluffy. Add egg and vanilla extract; beat well.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Stir in sprinkles carefully.
  5. Drop rounded tablespoons of batter onto prepared baking sheets about 2 inches apart.
  6. Bake for 10-12 minutes or until cookies spring back when lightly touched. Let cool completely.
  7. For the frosting, beat 1/2 cup softened butter and marshmallow fluff until smooth. Gradually add powdered sugar, beating well. Mix in vanilla extract and heavy cream; beat until creamy.
  8. Spread frosting on the flat side of half the cookies, then top with remaining cookies to form sandwiches.
  9. Decorate edges with extra sprinkles if desired. Chill for 30 minutes before serving.

Notes

For an extra fun variation, try adding a teaspoon of almond extract to the frosting or use cream cheese frosting for a tangy twist.
