French silk pie recipe

  • 1 1/4 cups chocolate wafer crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 ounces semi-sweet chocolate, melted
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup heavy cream
  • Chocolate shavings, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine chocolate wafer crumbs, melted butter, and 1/4 cup sugar. Press mixture into the bottom of a 9-inch pie plate.
  2. Bake for 8-10 minutes, or until crust is set. Let cool completely.
  3. In a large bowl, beat melted chocolate and softened butter until smooth. Gradually add 3/4 cup sugar and vanilla extract, beating until light and fluffy.
  4. Beat in eggs one at a time, beating well after each addition.
  5. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into chocolate mixture.
  6. Pour filling into cooled crust. Refrigerate for at least 4 hours, or until set.
  7. Garnish with chocolate shavings before serving.

Notes

For an extra layer of flavor, sprinkle a pinch of sea salt on top before serving.
