French Onion Pot Roast

A rich and savory French Onion Pot Roast slow-cooked to tender perfection, combining caramelized onions, tender beef, and a flavorful broth for a comforting meal.

  • 3 lbs beef chuck roast
  • 4 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 1 cup dry white wine
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and butter, cooking slowly until they are deeply caramelized, about 30-40 minutes. Stir occasionally to prevent burning.
  3. Season the beef chuck roast generously with salt and pepper.
  4. In the same skillet, sear the roast on all sides over medium-high heat until browned, about 4-5 minutes per side.
  5. Place the seared roast in a heavy oven-safe pot or Dutch oven.
  6. Add the caramelized onions and garlic on top of the roast.
  7. Pour in beef broth, white wine, and Worcestershire sauce. Add thyme sprigs and bay leaves.
  8. Cover the pot with a lid and transfer to the oven. Cook for 3 to 3 ½ hours, or until the meat is very tender and easily pulls apart.
  9. Remove the pot from oven, discard bay leaves and thyme stems.
  10. Slice or shred the roast and serve topped with caramelized onions and pan juices. Garnish with fresh parsley.

Notes

For extra richness, serve with creamy mashed potatoes or crusty bread to soak up the delicious onion gravy.
