This Fiesta Lime Chicken is bursting with zesty citrus flavor and a hint of spice. It’s a quick and easy weeknight meal that’s perfect served over rice or in tacos.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 limes, juiced and zested
  • 1 orange, juiced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional: fresh cilantro, chopped, for garnish

Instructions

  1. In a bowl, whisk together lime juice, lime zest, orange juice, minced garlic, olive oil, chili powder, cumin, cayenne pepper (if using), salt, and pepper.
  2. Place chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade, discarding the marinade.
  5. Grill or pan-fry the chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing.
  7. Garnish with fresh cilantro (optional) and serve.
