Perfect Egg Muffins with Spinach and Feta!

These easy egg muffins are packed with spinach and feta cheese for a healthy and delicious breakfast or snack. They’re perfect for meal prepping and grab-and-go mornings!

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 6-cup muffin tin.
  2. In a large bowl, whisk together eggs and milk.
  3. Stir in spinach, feta cheese, salt, pepper, and red pepper flakes (if using).
  4. Pour the egg mixture evenly into the prepared muffin tin.
  5. Bake for 20-25 minutes, or until the muffins are set and golden brown.
  6. Let cool slightly before removing from the muffin tin.

Notes

Serve these egg muffins warm or cold. They’re also great with a side of salsa or hot sauce.
