This hearty Egg Hashbrown Casserole is the perfect breakfast or brunch dish. Packed with crispy hashbrowns, fluffy eggs, and savory cheese, it’s a crowd-pleasing meal that’s easy to make.

  • 1 (30 ounce) package frozen shredded hash browns, thawed
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup shredded cheddar cheese
  • 12 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Cooked bacon or sausage, crumbled

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine thawed hash browns, onion, green bell pepper, and cheddar cheese.
  3. In a separate bowl, whisk together eggs, milk, salt, and pepper. If using, add cooked bacon or sausage.
  4. Pour egg mixture over the hash brown mixture and stir to combine.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. Bake for 45-50 minutes, or until golden brown and a knife inserted into the center comes out clean.
  7. Let stand for 10 minutes before serving.

Notes

Serve with a side of salsa or hot sauce for added flavor. You can also add different vegetables like mushrooms or spinach.
