Taco Casserole

A hearty and flavorful baked taco casserole that layers seasoned ground beef, beans, cheese, and crunchy tortilla chips for a comforting Mexican-inspired meal.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup chopped green onions
  • 1/4 cup sliced black olives (optional)
  • 1/2 cup sour cream (for serving)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. Add taco seasoning and 2/3 cup water to the beef. Simmer for 5 minutes until thickened.
  4. In a greased 9×9 inch baking dish, spread the refried beans evenly on the bottom.
  5. Layer the seasoned ground beef over the beans.
  6. Spread salsa evenly over the beef layer.
  7. Sprinkle shredded cheddar and Monterey Jack cheese over the salsa.
  8. Top the casserole with crushed tortilla chips and sliced black olives, if using.
  9. Bake uncovered for 20 minutes until cheese is melted and bubbly.
  10. Remove from oven and let cool for 5 minutes before serving.
  11. Garnish with chopped green onions, fresh cilantro, and a dollop of sour cream.

Notes

For extra creaminess, mix some cream cheese into the refried beans before layering, or serve with guacamole for a fresh twist.
